These Energy Snow Balls look like a truffle. What an easy recipe with only 4 ingredients. So enjoy this gourmet treat. YUM!

Ingredients

  • 2 cups Walnuts

  • 2 cups of Medjool Dates - pitted

  • 1 cup of shredded unsweetened coconuts

  • 1/2 teaspoons sea salt

  • 1 teaspoon Vanilla extract



Preparation

INSTRUCTIONS


Step 1


Place walnuts place in a food processor or Vitamixer till crumbly.


Step 2


Soak dates for 20 minutes in warm water when soft add dates to the blender, with vanilla, sea salt. Blend until sticky, uniform batter is formed.


Step 3


Scoop the batter in tablespoons size then roll and form balls.


Step 4


Arrange them on a baking sheet lined with parchment paper.


Step5


Roll the energy balls in coconut and place in fridge or freezer for 30 minutes. t


Note: You can make a lot of variations, mixing in dried fruit. Choices in the outside coating can be coco powder, and sesame seeds. YUMMY!
